Picturesque 5 star hotel located in Paarl has a newly vacant opportunity. The Chef de Rang will report directly to the restaurant manager.
Summary of Responsibilities:
- Supervision of Demi Chef de Rangs and Commis de Rangs in the front and back of the Restaurant.
- Responsible for a station and for ensuring that the service within the station is perfect.
- Knowledge of all aspects of service within a fine dining restaurant.
- Knowledge of all the different cheeses.
- Responsible for the correct storage and service of cheese.
- Knowledge of the wine list
- Knowledge of the Cigar Menu
- Responsible for cigar service
- Knowledge of daily changing lunch and A La Carte menus:
Daily changing 3-course Lunch:
Choice between two starters, two main courses and two desserts
A La Carte menu:
11 dishes ranging from Club Sandwich to Beef Sirloin.
Most of the dishes on the menu can be ordered as a starter or main course portion.
- Knowledge of Bosman’s dinner and daily changing A La Carte menus:

- Knowledge of cocktail list, classic aperitifs, digistifs and coffee specials
- Responsible for the correct taking of orders
- Cleaning and re-setting of F&B front of house area (Bosman’s, Terrace, Pool Patio and Bistro).
- Preparation of Mise-en-place for service
- Responsible for on the job training of Demi Chef de Rangs and Commis de Rangs
- Knowledge of the Plus Point system
- Responsible for correct charging of bills
- Responsible for taking correct reservations for the restaurant
- Knowledge and ability of accepting deliveries for the restaurant, checking the delivery not / invoice and correct storage of deliveries.
- Excellent communication skills in English and preferably an additional European language eg. German, French etc
